In this ecogastronomic event, four Piedmontese chefs explain their recipe for making sustainable meals and demonstrate how they do it.
Christian Mandura, chef of the star-awarded restaurant Unforgettable, has developed a cuisine that features vegetables. Animal protein is added for zest, to tease the senses, and to titillate them with combinations beyond their usual place as side dishes.
Antonio Chiodi Latini, chef and owner of the restaurant of the same name, explores the world of vegetables from a new perspective: cooking, blending, distilling, and refining of the vegetable to achieve a balance in taste that evokes comfort while novel and unlike what one expect from whole food yet thoroughly enjoyable.
Giuseppe Rambaldi sets the table and serves dishes that strike a balance between past and present, land and water, space and time, poetry and comedy, with local ingredients and foreign techniques. In his restaurant, Cucina Rambaldi in Villar Dora, traditional tastes take on nuances but the opposite may also occur and sometimes the usual fare can come as a surprise, a tasty one, of course.
Juri Chiotti is chef at Reis, in Borgata Chiot Martin, which is his restaurant and life project, where he decided to develop his ideas and bring up his children. His cuisine uses circularity as a tool to explain and create dishes in the mountains where he was born and has chosen to live in pride.
